 BBQ Pork

- 1kg -pork belly ( cut into 3cm slices )

- 3- Lemon grass (chopped)

- 3- garlics

- 2- shallots

- 1 - red chilli

- 1- tablespoon honey

- 1/2 - peppers

- 1- table spoon chicken stock

- 2- fermented tofu or 1 tablespoon of oyster sauce

- 1 tablespoon annatto oil

- 2- tablespoons vegetable oil

- 3g- bbq spice

 

​Method

Wash the mushrooms with cold water . Drained it and place in large bowl then set aside

 

Heat a little oil in saucepan. Add the shallots , chilli and lemongrass stir fried until aromatic then add annatto oil , mushrooms stock , fish sauce , rock sugar and 3g bbq spice . Turn off the heat . Pour it into the mushrooms bowls and mix it up together. Add extra two tablespoon of veg oil .

 

Leave to marinate for 30 mins - 3 hours before cooking.

 

Heat a charge-grill or barbecue( grill ) and cook the mushrooms both side until done to your liking . Serve with rice noodle , rice of your choice .

Vegeterian BBQ Pork

Ingredients

- 800g exotic mixed Mushrooms

- 2 teaspoons rock sugar

- 1 1/2 - mushroom stock

- 3 lemon grass ( chopped )

- 3 shallots ( sliced)

- red chilli

- Annatto oil

- Oil 

- 1 tablespoon vegetarian fish sauce

- 2g -3g bbq spice


Method

Wash the belly pork with cold water with tablespoon of salt . Set aside to dry out . Place the lemon grass, garlics ,shallots and red chilli in the grinder . Add 2 tablespoons of water to grind for a minute. Then use the sieve to extract all the juice into a small cup . Removes all the bits away .

 

Use a large bowl place the belly pork . Add chicken stock , honey , pepper, fermented tofu , annatto oil , vegetable oil , bbq spice and pour the cup of lemon grass, garlic ,shallots and red chilli juice in the bowl .

 

Mixed them well and leave to marinated 30min - 3 hour ( or over night ) Heat a charge-grill or barbecue( grill ) and cook the pork both side until done to your liking .
